KILLER GUACAMOLE (From
Rick Bayless's Mexican Kitchen cookbook) Makes four cups 1
large ripe round tomato, cut into small cubes 3 Serrano chilies, stemmed and
chopped 1 large garlic clove, peeled and chopped 3 Tbsp chopped fresh
cilantro ½ cup finely diced white onion 3 large (about 1½
lb) soft-ripe Hass avocados 1 lime, juiced (about 3+ tsp) 1 tsp salt Either
eat immediately or cover with plastic wrap pressed tight. Can be chilled and stored
for up to four hours. Then the onion will overpower the flavor. Flavors and textures
will fade once guacamole warms up to room temperature. Click
